Hub is shimano Parallax with a silver sticker. I’m not used to gears, but it seems to have space to fit more? Right now it has 7 speed. Trying to figure out if to save and go 1×9 or just stay with 1×7. Thanks a lot!

No, it would have to have a 4mm spacer behind it if it was and you can see the end of the splines
If that’s a 7 speed cassette with no spacer, then no, it won’t fit anything beyond 7 speed.
I have this same hub in my inventory, it can only take up to 7 speed. Luckily you can get wide range 7 speed hubs these days.
Whats the rear frame spacing? You can always buy a used 8/9 speed wheel probably with cassette already on it if ur spacing is 135mm
I would go with a 1×7 using a Rivendell Jim cassette: https://www.rivbike.com/products/cassettes-7
It will only fit up to 7 speed – **but**: this uses a pretty standard freewheel, which can easily be replaced by one suitable for 8/9 speed cassettes (have done it).
If you want to do it, you’ll need a shimano Deore M525-A freehub. You’ll need a cassette tool and a chain whip to remove the old cassette. You’ll need to remove the solid axle, which will slide out once you remove the nuts. You’ll need a magnet or something to pluck out the ball bearings. You’ll need a 10mm hex wrench to remove the old freehub. Clean, grease and replace.
