Any reasons why panniers are not used for bikepacking?

That’s a nice Pass Hunter. I’ve got a Polyvalent that alternates between a flat bar and drop bar gravel bike (hagen decided which I prefer yet) and a Piolet for my bikepacking ride. VO has some really nice frames for the price.
