Just stopping by to mention the N630 road that runs from Seville all the way up the country, and is meant to be awesome for cycling since there’s a motorway that runs parallel to it which attracts all the traffic, leaving it nice and quiet, flat, and it runs through through loads of rural towns and historical cities like Cáceres, Mérida and Salamanca. It looks amazing imo and I’ll be doing it this Spring. Just google ‘Spain N630’ to see the route. If you like the look of it but want to finish in Madrid you could incorporate it into your journey at the start and then split off towards Madrid. Another thing to mention is that there is also an off road bike route that runs closely to this one, often directly in parallel, and it’s actually a way pointed camino de Santiago path. So you can mix and match on and off-road portions if that’s what you’re into.

    Just a thought. But I’ve also heard great things about cycling in other parts of Andalusia too. Whichever route you go for I’m sure will be great.
