I would highly recommend riding some of the Ravel trails in Belgium (https://ravel.wallonie.be/en/home.html) and/or the Vennbahn (https://www.vennbahn.eu/en/), then continue south-southeast in France through the Alsace region (many very cute villages and wine country). The western edge of Germany is not great for cycling, relative to the surrounding alternatives.
I would budget roughly three weeks for that trip.
