I’ve been riding this for almost a year. 70% pavement, 30% gravel. Looking for 700×40 hybrid road and gravel tires. I see some people do two different tread patterns for front and back. Any suggestions are greatly appreciated.

G-One Allround are really allround.

Pirelli Cinturato H, both the H and M versions are great tires.

Conti Terra Speed might be a good choice. I have the Terra Trails in 700×40 and I really like them for mixed use, but I do more 50/50 split of dirt/gravel and pavement.
