Disk brakes on your bike have to be bedded in much like your car. When they’re brand new they can be really grabby. Shimano may have a specific procedure but it’s basically making some long, slow stops in increasing intensity and speed to get heat into the pad and rotor.
My shop also mentioned that road and gravel bikes need a good, hard braking to a full stop to clean the pads off once in a while, especially if it’s not super hilly where you ride.
