Hi all, not too familiar with disc brakes. Got this new electric bike and it appears one side of the caliper is too close causing rubbing on the rotor. The adjustment screw has it pulled back as far as it will allow. Any ideas?

You need to center the calliper
Check this out https://www.parktool.com/en-us/blog/repair-help/mechanical-disc-brake-alignment. Since your mechanical brake is ‘single action’ there are a few different steps to follow that Park has outlined.
