Using this picture because I like this one lols. Someone, most likely a less fortunate stole my bike seat post. Are there like security nuts and bolts that I can use? Special or uncommon ones you know, not like an Allen key or a hex bolt something a regular person wouldn’t have?

Best one I’m aware of is Hexlox: https://hexlox.com/en-us
I’ve put magnetic ball bearings in the hex head. Not impossible to get through but it’s a small time delay (just like any lock). I’ve also seen people use a piece of old bike chain from the seat rails to the frame, but I never liked that solution.
Best idea is to keep your bike where you can see it if possible.
One way a lot of people with Brooks saddles do it is to use an old chain off your bike and loop it through the saddle rail and the seat stay. Use tube or shrink wrap to protect the finish.

You could also run a chain/cable in a similar way.

I use these for the seat tube and wheels. The key is basically a five-sided Allen key. It’s not unbreakable, but it buys time.
