I was thinking of buying an mtb for partially my daily commute and a little offroading on the weekend ( not too hardcore).
I have settled on cube, partially due to them having the best service in the area in which I live and partially because my old bike was also from cube. I was willing to spend about 500-600 eur.
Now, I am confused which hardtail to buy. There are three options.

Please help me understand the difference between all of them. And which one should I buy 😄

There’s not a huge amount in it but I’d go with SLX if you want a better fork or the EX if you want more gearing (2×10 vs 2×9). I would personally go SLX.
