See derailiur position on lowest gear. Shorter chain would pull it forward more.

Too long, looks like it’s resting on top of the chain stay?
Big cog, to chainring + 3 links, for shimano.

Can you double-check that this is the SGS-type XT derailleur that has longer cage and the capacity for 10-51?
If so, then I would remove exactly one pair of chain links. It’s definitely too long in the smallest sprocket.
If in doubt, count the old links

Modern Shimano 1x RDs have a much larger b gap setting than derailleurs from past generations. you can’t go wrong following the manual to the letter, but you can go wrong following a 10 year old video that doesn’t apply to modern derailleurs.
