Not sure if its a learning process, but the brakes just feel odd to grab. Is this just how its supposed to be. Im using freewheel side for now until I get used to the frame.

It came on some skinny ass tires too lol. Look like pizza cutters
This is the classic low drops shape. Most modern bikes use compact drops with the brakes/shifters aligned to be inline with the flat part of the drops. This layout is usually more comfortable.
Try change to risers? Or maybe compact drops with inline brake levers instead of hoods
