Looking for a nice budget bike

Ok..so I’ve gone on two bikepacking trips and both time it was a blast. Both times I rented a bike, so I’m looking for something to own.
I’ve mainly been road biking and basically spent my big bike money on my Emonda Pro disc (which I love). Obviously that would work for on road trips, but I’d like something versatile and gravel bikes seem to be the right thing.

So I’m looking for a decent bike that’s under 1k. I live in Honolulu, so most trips would involve flying.

I’ve seen the Poseidon Redwood..anyone have any experience with this ride? Is there something better at a similar price point?
