This Schwinn made me absolutely fall in love with biking this summer, but I’m interested in something more my size and a little less weighty now that I know how much fun a bike can be. I’m looking to build something up for ~$700, I love a vintage/njs look with threaded fork, and figure I can bring over a few components minus the wheelset from this schwinn.
I’ve seen some sweet 90s cannondale road frames on eBay for under $200, but am worried about aluminum vs steel. Should I keep looking for the perfect vintage steel, or is the alu too light and fun to ignore?

If your budget is around $700. I would first start searching for dedicated track/fixed gear frames with horizontal dropouts. If you love riding fixed gear on road conversions then wait until you ride a dedicated track/fixed gear frame. You’ll feel more agile and quick.
If possible, I would stick to the NJS route (biased? maybe) since steel track frames ride extremely nice on the street, despite the stiffness.
I have not owned an aluminum bike so I will let someone else chime in on that.
