I recently replaced my shifting cables and outer housing, using the previous as a template, however I’m beginning to think I cut them too short. As pictured, the metal from the barrel adjuster and is kind of digging into the plastic of the outer cable housing. Should I just keep riding and replace when I have shifting issues?

I would cut mine longer. I like the cable ferrule to enter the barrel adjuster straight instead of the angle as pictured.
I would go at least an inch longer next time.
Are you sure the derailleur is installed right? It looks like it’s rotated too far forward at the mounting axle.
Is that shift housing or brake housing? Cause if it’s shift housing, using it without ferrules will have it fail pretty quickly.
Did you use compression less housing? The outer shouldn’t be making that kind of contact with the ferrule
The cable length is about right.. tho it doesnt make a difference.. the only reason the extra length matters is ease of maintenance. Other wise if is shifts then it is perfect
