This is going to be a tough one since neither of those is a touring bike.
I own that trek, it’s not uncomfortable but it’s a pretty harsh ride, you can fit 28mm tires but that’s it, tiagra/105 mix is good
That Fuji looks like it could fit bigger tires at least. I would probably be looking to change some cockpit parts but it wouldn’t be worth the cost to go to drop bars on that bike so if that’s what you were thinking forget it.
Both are way overpriced. Fuji is better for long distances; however, it is not optimal with a flat bar. Trek is a road bike with pretty aggressive geometry, so it’s not good for long distances with a less-than-optimal body physique. You can get a used alluminum/carbon fiber endurance road bike in that price range for long distance riding.
What types of surfaces will you be riding on when bike camping?

I think the Fuji is best. And flat bars are great for touring. You get better braking leverage with the increased load and can enjoy the scenery more easily ( main reason for a your, after all). Plus it has the rear rack and already works with panniers
