I gave myself a weight problem at the young age of 12 by going on a diet to lose five pounds! I starved myself and lost the five pounds and immediately overate, gained it back and more. So, I tried dieting again, but it took a bit longer to lose the then ten pounds and again I gained that back and more. When my weight reached 199 ¾ I stopped weighing myself. By then I had tried every diet I could find and at this point I couldn’t lose weight anymore. My body had become a fat storing machine. I would try weight watchers and lose maybe a quarter of a pound one week and then plateau for two weeks. It was very frustrating. At age 30, I finally realized diets don’t work and I stopped dieting which resulted in no more binging! Over the next ten years, I was able to get off 40 pounds and stalled at an unhappy 150-160 pounds for years
Fast forward to a cycle tour I was on in March of 2020 where two of our group had shifted to vegan. My husband Stephen and I thought now these two were really off the deep end. Charlie lent us the DVD “Eating You Alive” which our group watched in June on a bicycle tour in Eastern Oregon. We all stopped eating meat right then. I had gained 7 pounds since the March tour by eating more salads with full fat homemade dressing! Then I listened to “How Not to Die” on YouTube and bought Dr Gregor’s Cookbook. In June, I decided to ‘put it to the test’ starting July 1st and told my husband I was just going to make things from the cookbook to see if it really worked. I also got bloodwork done and saw I had Cholesterol over 200, blood pressure at 130/80, weight 159, Heartrate 74 and A1C at 5.6. Magically the weight started to come off. Stephen wasn’t going to join me at first but after he tasted the first couple of meals he was taking full helpings and liked the taste so much he joined me. Stephen weighed in at 173 which was more than he had ever weighed. His Cholesterol was high, and his doctor wanted him to start taking statins. I was over the moon when he decided to join me. I soon found Chef AJ and I watch her interviews every day.
Since going WFPB SOS-free in July 2020, I lost 46+ pounds and Stephen lost 34. Our cholesterol is now in a normal range and our blood pressure averages around 108/70. My heart rate is back down around 44bpm like it used to be. I weigh 113 pounds and I feel amazing!
I cycle tour and in August did a 30-day tour up through National Parks into Canada and I was eating WFPE SOS free, and I had wonderful food the whole tour. Next, I spent a month in Australia, and I spent the whole time eating nothing but plants and loved it. I started a YouTube channel to show others how to travel and cook and eat plants no matter where you are.
I am a retired physical therapist and have always been interested in preventative medicine. I love to exercise and ride my bike, lift weights, walk, hike, and just enjoy being active. We remodeled our home from 2021 to 2023 and we stayed plant exclusive with no running water or heat for most of the winter of 2022! We are learning how to grow our own food and sprouting broccoli seeds!
I started a pod which I call Kitsap County Podsters, and I post to a Facebook group I created for it. Last year I started having Pod potlucks and cooking/food prep demonstrations for my area. I volunteer with the local bike club, and I am the treasurer and Ride Coordinator which keeps me very busy! We also lead mostly short tours of a few days up to four weeks during the summer months.
Both Stephen and I fasted at True North for 5 days with a three day refeed in November/December 2022 and that was an amazing experience.

There was a lot of stress in the household and eating was my comfort and I had to eat it all because if I just ate some I’d get caught so I the whole thing had to disappear so that in all the confusion with seven people in the house
Nobody suspected or if they did they didn’t say anything but somebody must have I don’t know but anyways I started overeating at a young age and uh and so I started dieting at a young age okay so I got the potato mashed here now I’m going to add
Some jalapeno and I roasted it a little bit so in instead of pepper and um chipot seasoning I used jalapeno and then instead of pepper I’m going to put in a little bit of the no salt seasoning from Costco yeah that’s back it was gone for
A while but I hear it’s back I called Costco and I bugged them and they said they were working on it and um trying to find another uh distributor for it and they did they they did it’s good it’s a little bit of a different recipe than the first one but
I I really enjoy it okay and then I’m going to mix in some scallions that I chopped up and of course some steamed kale that is great I was a lifetime Weight Watchers twice I made my goal and stayed there for about a minute and then as

Kidding the other day I heard that wow closing their doors because I guess they said too many people just want the drugs now wow oh my gosh so people for that that just amazes me so I’m going to do six of these in the oven and I’m going to do one in the
In the insta pot just for fun I haven’t tried that and I was heating them up in the insta pot and they were really good so I thought oh I’m just going to try the the second time around you just do it for 30 minutes so I’m just going to pile it in
Here it’s so simple oh tell you potatoes they’re the spice of life I was brokenhearted when I started dieting and found that I that it wasn’t going to be okay to have potatoes so this program is just perfect for me and the fact that I’m a volume eater
And no one ever told me about volume eater in fact in the beginning Weight Watchers was all you can eat vegetables but my mother said well you’re never going to learn how to eat like a lady oh my a whole yeah eat a whole cauliflower head at once
So you know I kept trying to be to eat like a lady m model and I just it doesn’t work for me I need food I’m very active and I I I want to be able to eat when I’m hungry so this program is perfect for me
And the reboot is so much fun you and you get that every morning you get a a hit of um dopamine from either Chef AJ or or JP or the two of them together and it’s just it’ll keep you motivated it’s so silly not to do it for

Arugula seeds so I was sent away for the arugula michr gream and it came yesterday so I’m doing it and it’s this little black thing here so I’m supposed to check it at two o’clock and all I see are seeds when when the guy did it on his on the channel he saw
Germination but I just see seeds I don’t I don’t know if that’s germination I would think I need to see Little Sprouts maybe they are in there I just can’t I don’t have the site these old eyes but it’s only been 24 hours and then for
The third time I am making yo soy yogurt and I just realized I was just reading over the instructions before you and I got on and I was supposed to bring the milk to a boil and then lower the temperature back down to 108 and then
Stick it in the um acidophilus and then stick it in the insta pot and I didn’t bring it to a boil I just brought it up to 108 degrees so I guess soy milal isn’t cooked I don’t know if 100 days is enough to cook it
But I don’t know but don’t don’t be so impatient with the arugal it takes more than a day you know oh yeah it takes several days yeah seven days but you know you want it to look like what they say in the when they tell you about it how to
Do it so anyway all right so I am gonna share my screen okay absolutely and I am going to show this PowerPoint this is Stephen and I and I wanted to say Stephen also joins me let’s see slideshow from beginning here we go wh That’s not the beginning the wrong way good hey
Okay now why can’t I go back maybe I go this one there we go perfect this was this summer and um both of us had high cholesterol high blood pressure not real high but but higher you know we we thought we were eating really healthy before we got onto this program and uh
No all our numbers my my my A1C was like 56 or 57 I mean just before pre-diabetic and I’m like oh my gosh what are we eating that isn’t right and that’s when we went on a bike tour with some friends and uh two of them were had gone whole
Food and so we were all ears and listening to them um although in the back of our minds we’re thinking oh no these two have gone crazy and we watched the DVD eating you alive and I could not eat animals after that I couldn’t eat meat um and
So that overnight I was vegetarian well then I thought I’ve been vegetarian before and I didn’t lose any weight so I thought I I need to try this vegan thing because I remembered Bill Clinton that he looks so amazing so different when he went vegan
So I thought okay that that’s got to be the way to go well but I didn’t understand about calorie density or oil and I used uh sundried tomato vinegarette in my dressing and I gained seven pounds oh boy yeah didn’t take long like within that was in April
May and by June I realized this isn’t working so I got Dr Gregor’s book and I thought okay let’s put this to the test so July 1st I went off all oil you know I I just I went Whole Food Salt oil and sugar-free and cooked out of his cookbook and I
Just started making everything out of that because you do wonder when you first start this how do I what do I what do I eat which is another thing about the reboot you guys there’s a meal plan now so if you do like to have you know
An idea of what to make there’s there’s a a meal plan with recipes and you know it you can’t go wrong in fact last year just for fun I just followed along with the meal plan and um on my channel I just made whatever AJ said to make and it was fun
So it’s it’s definitely worth worth your time definitely you you deserve it um so anyway I we we switched and at first Stephen said well you go on ahead I I I’ll do my thing but I started making things and he started tasting them and within a week
He said I’ll just eat what you’re making because it tasted so good so it didn’t take us long to adjust we didn’t really go through a big thing I’m not a salt eater anyway um I’ve watched my weight my whole life and salt was something
That I just thought I’m not going to get started with that and um the only thing was you know fat and dairy those were the things that were really valuable for me to give up and the weight started melting off and within 15 months I was down you know to
This size and I couldn’t believe it I mean my Weight Watchers goal was 138 and this now I weigh 113 and I mean it just kept coming off it was the coolest thing I thought oh this this is so cool this works and then I lost all the weight and
I I’m like oh what do I do now because this has never happened before to get this thin and and you know I was kind of worried that I might gain it back again because I was just thinner than I’d ever dreamed I could be but I
Just kept eating the same way and I’m like oh well that’s the ticket just keep eating the same way just like Chef AJ says you you know everything you say Chef AJ’s you’re always right you think goldhammer right you’re always right no I but thank you but no I just I just do
What he says well me too and I do what you say and I do what Dr Lyle says and you know I just I just love it I just love eating this way oh you know the veggies for breakfast I thought I don’t know if I
Can do that you know I I was definitely an oatmeal and fruit eater and one morning I was making your Russel sprout recipe for for later on in the day and I hadn’t eaten yet and I tasted one and it tasted so good I had another and then
Another and then another and then I thought hey I’m eating veggies for breakfast and I’m liking it and that was it I I never turned back I love having veggies for breakfast and they can be cooked they can be big salads um you know with all kinds of
Stuff in it although I don’t I tend not to um eat uh fat you know any kind of fat in the salad I make all my dressings like you do Chef AJ with with no fat I love your your honey mustard dressing and I was thinking the next time I make
It I’m going to try some horseradish in it because I found a horseradish root at Sprouts and so I I uh ground it all up and I freeze it I hope it lasts um because a root is huge and it goes a long way so anyways um the weight stayed off and in
Fact I’m I’m thinking that no I guess I was around 115 in that by that uh 15 months and now I’m around 113 so imagine that two pounds more on maintenance I just it’s just amazing and it’s been okay so it’s been since December of 2021 so so 22
A whole year I maintained after spending a whole year losing it’s just a just so cool so I’ve been on the on the know I feel like I’ve been this way all my life now except that I’m I’ve got that body you know where I look in the mirror
And I think is that me so I mean I feel like I’ve been eating this way all my life but I’m not used to having a little body but it’s really fun to to see that still there so the big things for me were the calorie density and the pleasure trap
Learning about those two things just really hugely made a difference for me and this was a trip we l to do bike touring and I just wanted to show this trip we did up to Bellingham so we had six days of no rain which which is a
Good thing here and it was in September and so Stephen and I thought let’s take advantage of it and we loaded up our bikes and we took off and that camper be behind me was an Airbnb and we actually slept in that this night so oh we’re
Just having so much fun and we stay Whole Food plant exclusive as sofus free the whole time we’re out even when I when we slept on this camper I had things that we could have there was a microwave in on a tray nearby and I use that and and
Um there was a sink in the bathroom and I used that and you know I can always find a way to keep us on course and it’s fun to find a way so that was me on the left there Pat petting the kitty um that was in my
20s wow yeah and that was that’s not my heaviest I think I’m in the 180s there and I went up I wouldn’t weigh myself after 199 and 3/4 um and so I don’t know how much higher I went than that but this picture is the only one that survived because I
Hated being fat and I hated having my picture taken and so anytime I found a fat picture I just destroyed them and and also any old photos Stephen and I we gave away everything to go traveling to twice we did that and um so each time I P out more of my photo
Albums because we just we didn’t have any place to put them so uh we just got rid of them and it is kind of an amazing feeling to have nothing you know like I think the lowest we got was there were four black those black and yellow tote
Containers and my girlfriend kept them kept them for us while we went on a bike tour you know around the United States and that was all we owned in the world and it was it was it was quite a a wonderful feeling to be free of of possessions you know let me just
Test those look good I think I’m just G to keep those at 10 minutes so those are the I was looking at the potatoes in the um the air fryer those are the ones I’ll eat for lunch so that’s my before and then this so
I I I was able to get down from that you know 200 pound mark down to about 160 doing all kinds of things Body for Life Janine Roth I went to one of her workshops um um I read diets don’t work by Bob Schwarz and I I started to understand
That one of the reason reasons I binge is because I diet and in order to stop binging I would have to stop dieting and so I promised myself that I would I wouldn’t D it no matter how much I binged I wouldn’t D it and I would you
Know I binged I’m like okay but I’m not going to die it I’m not g to do it and by very quickly there was no reason to binge because all I would always binge because I was always getting ready to go on a diet and I thought I gotta
Eat this because I’m never GNA eat it again and you know I would last a few hours and uh dieting got so ineffective but in sanity I kept trying the same old things and uh without success so I guess because I’m so active and I
And I sort of ate healthy I could get stay around 160 but I just I couldn’t get below that and so this picture where I’ve got the the flowery shirt on that’s me on the left with Stephen right next to me um that’s what I was in March of 2020
Wow yeah and then the the two people to the left of us Charlie and Carol they were the two vegans and so we just watched what they ate um the whole time and then decided to to hop on and try it ourselves and actually this whole group went vegan Isn’t that
Cool the whole group it’s so cool and we still are vegan and so now when we go on a bike tour we find out where the nearest grocer store is instead of that used to be the nearest bar or Tavern or rest you know nice restaurant now uh
Stephen and I won’t go we don’t go out to eat the other ones will and they they slip and slide doing that but I just cook in the room every night and I just love that I can do that so this is an after picture this was me this
Summer and I like that picture so much I thought I would put it at the beginning and in the middle then and then this is me in the winter and I just I can’t believe how Slender my body is so I just I just want to show you if
You do the reboot you can you can have a the body that you so deserve like you always say OHF AJ you can do it you can do it I just want to encourage people and this is here’s some of the food so this is a you know potatoes and veggies
And it’s sort of that you know 5050 and I eat my veggies first and then um the hardest thing for me is waiting till I’m hungry and stopping when I’m no longer hungry and that is my my whole that’s my 2024 Vision you know is to be able to do that more more
Readily um effort less effortfully you know know as I get into the practice of doing that and I I realized as I eased into that this year because this has been my whole thing for 2024 that I I kept on wanting to force myself to not eat until I’m hungry and I
And I finally I realized you know Janet this never works to try to make yourself do something why are you still doing it trying the old way and I thought oh yeah what’s the new way well I watched broccoli mom I watched her with Ramy and ramy’s her little two-year-old and when
Ramy gets fussy and Amy tries to ignore her she just gets louder and that’s exactly what my little kid does you know the more I say no you can’t have it the more I want it and so what she does is she picks Ramy up and she gives her kisses and
Hugs and and gives her you know a taste of something and she loves her and I thought that’s what I need to do I need to love myself you know and and do it because it’s it’s what I want you know so I as soon as I thought that there a
Shift happened in my brain which was the same shift as when you know I was trying to restrict doing this and you or someone told me Janet you’re not eating enough and I’m like really I mean you gotta flip it on its on its side or or however you call that
Where we we we’ve just been conditioned incorrectly and we need to uncondition and recondition the correct way which is through love and compassion and permission and you know encouraging myself rather than discouraging and and this is the the first batch of twice baked potatoes that
I made and so I thought I I gotta show you a picture although I’m going to show you the real thing here I didn’t realize I was going to do it today but then I thought what’s more appropriate than a than a potato recipe and then this is a just you know
Sequencing I love to start with a with a nice big salad for my my main meal of the day and on the left of that is I took spaghetti squash and made spaghetti squash squash patties and that was another thing that I thought about making today and I think next time I do

Some ideas and just get support and and a lot of people people you know they come on and then they leave when it comes to going into rooms and I just think no don’t leave don’t leave it’s it’s just so valuable to have one-on-one time with each other and and and help

Medication except for me so so I was heading there definitely but none of them are interested in trying to eat this way are they no my sister when she got diagnosed with cancer she came down with a pad and pen and said okay what do
I need to do and she she has done amazing through her chemo she’s never had any side effects that you know like sick nausea they kept asking her and wanting to give her drugs for you know nausea and stuff she goes I’m not having any nausea and then um she had the
Masectomy and she just bounced right back right back from that she was back to work within two weeks and they thought that she’d be out for at least four weeks maybe six so I mean she’s just really she’s responding so much differently being on plant-based diet
Since last February so almost a year now so and the only thing is she slipped back into drinking coffee again and her blood pressure is back up again so um she’s I I told her about same May yeah the coffee substitute so she’s gonna try that see if she can get off it

🥔 Speaking of potatoes! Accidentally discovered the best homemade potato soup ever. I baked 8 russets (fork poked, no oil, just placed whole on a parchment lined baking pan) at 400 degrees for 60 minutes but something came up and I ended up leaving them in for another 30+ minutes. I’m new to baking potatoes and didn’t realize they could over cook. When I finally took them out of the oven, the skin was very rough, overly hardened in spots to an overcooked crust. The crust was not really edible. I split them to cool and scooped the insides out with a spoon. It didn’t scoop out easily so I had to cut into the potato with the side of the spoon and take out a full spoonful of potato at a time. Then when most of the potato was scooped out, the rest was easier to scrape with the spoon. I added all this potato flesh into a water-based soup that had cooked for 30 minutes already of: leek, garlic, diced carrot, diced celery, diced fennel, diced green zucchini, and very mushy navy beans. Simmered for another 10-15 minutes. Here’s the interesting thing…I expected the potato chunks would melt into the soup base but instead the chunks and lumps remained and it was an incredible texture! The chunks of potato were like tender dumplings. My husband and I loved it. Definitely upgraded the regular potato soup to something special. We call it Spectacular Potato Dumpling Soup,or SPD Soup.😂 Love your channel Chef AJ💗

Thank you both, so very much for this video dear Ladies, I used to pop in every now and then to Janet on her channel she's SO INSPIRATIONAL (like you Chef AJ ❤ ) I lost all my excess weight during the build up to the Pandemic and have maintained that loss, even losing more weight over the holidays and I shall be 70 in a few months. I'm at a much healthier weight than I had been in decades thanks to eating plant exclusive and SOFA'S FREE (again, thanks to lovely Chef AJ ❤)
Things are changing for me in the kitchen as well…it used to be my least favorite place (would rather be out on my bike)👍 but now it’s like a new hobby for me and it just keeps getting better (although there’s lots of room for improvement). I live alone so making a pot of something is like batch cooking😊
