The video says the Kickr comes with an 11 speed cassette and if I have a 10-speed, I need to put on a spacer and my own cassette. Does that mean I need two spacers?
Can I ride with it as is? I have an old 9-speed cassette, can I just put that one on the Kickr?
Also, the chain doubles up like this on the lowest gears so the jockey wheel is rubbing up against the chain. I’ve always wondered, is that normal or something to worry about?

You are correct that the 11spd cassette on the Kickr will not work with your bike. The 9s chain is to wide for the spacing of the 11s cogs. The old 9s cassette you have with a couple spacers should work just fine. That being after you adjust limits for the derailleur and cable tension.
Your chain overlapping on the hardest cogs is a combination of B-tension being set to far in and your chain possibly being too long.
IF you want to ride this as is with zero modification you can. You could simply put the bike into the easiest cog on the rear where it shouldn’t skip. From there you can just run the Kickr in Erg mode on your app to control the resistance.
