For the past year i have been using these 203mm Avid g3 from Ali for the mere price of 17$ and this xmas i have been gifted new pair of shimano rotors because and i quote “brakes are no joke” but they are stamped in china. Now… should i wait untill i wear down the old ones or should i swap right away?

I’m real big about genuine parts over Temu/Wish/Amazon types. But a rotor is a simple piece of metal. Use them until they get down to minimal thickness, then put the Shimano rotors on. As long as they work and don’t warp.
Do you have a pair of calipers? Have you measured the thickness of the old rotors or are you just going by your gut?
Brakes are no joke, but rotors aren’t too hard to get right. I haven’t got a genuine g3 to hand to comment on whether it’s from the same factory out the back door type of deal, or a knockoff.
But given it’s the 1 piece rotor, everything looks as it should, I’d run it until in meats minimum thickness, then bolt the new ones on. If it were the 2 piece with more potential points of failure I’d perhaps be more concerned.
Assuming of course it does the job of slowing you down perfectly well.
