How does the cut off sensor work in these. I took it apart and noticed its some type of sensor and a spring. I couldn’t tell what activated it. I read somewhere that its magnetic?

Does the bike have a brake light function? It would not make sense to put money into disabling the motor when the brakes are applied since the rider would stop applying power. Second…the majority of the bikes have brakes which have way more stopping power than a motor.
yes, it’s probably magnetic, it must be a reed contact similar to a switch.
It’s a motor cutoff switch. When you pull the brake lever, it disengages the motor. Some systems allow it to operate a tail light, but dependant on the controller.
Some places mandate it in e-bike rules/regulations. ( Ie my home province of British Columbia)

To answer OP, cheap mechanical disc brakes levers, like I have on my ebike mostly have a basic on/off switch that when applied cuts the power to the motor. It even shows on your display. I had a problem with adjusting the lever and some times it would get stuck and not release all the way and the motor simply would not work.. I forgot to check the display and it gave me a headache coming home from work, until I figured it out.
For hidro brakes you can externally adapt a magnetic sensor like on the link below, bu I don’t know if internally they have a on/off switch or are magnetic.
