These came with the pedals I bought secondhand. My first time with Eggbeaters, almost fell over trying to unclip these. They’re really uncooperative and go against my experience with SPDs (since 2009).
I can grab some standard CB cleats right now in a few minutes, but I wanna know the difference between standard and easy release. Which one should I go for if I’ve been riding with SPDs for most of my riding life?

Don’t worry about the difference between the regular and the easy. Just get new cleats. Those things should have been replaced long ago.
But to answer the actual question, the release angle changes on them, from 15° to 10°. Both options come in two different float options.
Get the standard. Your choice on float.
