How would you ever install two bottle holders on this bike if you wanted to? Or is it just not possible because of the bag?

my tip for the ortlieb(?) saddle bag, you can buy a stabilitor strap for that. You can really feel that wait swinging when standing up or descending with corners. Going down from a mountain it will literally push you to the outside of the corner.
The strap wont eliminate it, but make it a bit better

I did same, crossing europe with aeroad.
Since you have the axl through possibility, look into tailfin. I know its expensive yet worth every cent .
No more flying saddle bag.
