Anyone have any particular thoughts on if this bike is worth 2100? Another note to this: the seller says its "a rare Emonda with rim brakes, making it the lightest weight Trek manufactured." Im just curious if anyone has any thoughts on that

Rim brakes drop the value by a lot and the rim brakes with carbon rims is not a good combination.
This frame/bike is also considerably older than 2023. Its a 2019 SLR6 frame/bike.
