Not seeing mounts for any racks so you’ll have to get a little creative. Large handlebar bag and huge seat pack. Where you off to friend?

I’d suggest rotating the brake levers down. That position puts your wrist at an awkward angle while positioning them rotated downwards let your wrists rest at a natural angle.

I’d also suggest removing the extra chainrings since you’re not using them. Same with the rear cogs if you have the knowhow. But honestly you’re planning to tour on this thing? Put the derailleurs back on.
    Edit: spelling

Have you had a test ride yet? That looks like one good bump will throw the chain.  Ghetto 1×1 is asking for trouble on worn components and no tensioner.

You’re going to drop your chain constantly. Both your chainrings and your cogs are specifically designed to let the chain easily drop to a smaller gear (or off the smallest), and the derailleurs are what keeps that from happening. You need singlespeed/1X chainrings and cogs that are designed to hold the chain on. You’ll likely need a tensioner as well unless you have a perfect gear ratio.

You need to do things properly if you plan to ride single speed, much less tour that way.
