I often seen bike route signs in France (the standard green ones, but with numbers, no names) that I can't find on any maps. For example, part of my route today was from Carentan-les-Marais to Sainte-Mère-Église. That's around 15km, and each turn had a bike route sign with either the number 52, or the numbers 5 and 2. Is there a map somewhere where all these routes are listed? They weren't on francevelotourisme.com as far as I could find. Thanks.

Use the bike layers in open street map!

Check this website. It’s data from OSM https://cycling.waymarkedtrails.org/#?map=11.0/47.5346/-2.7801
There is this official website too.

VeloPlanner. Beside featured routes there is a layer with all cycling routes from OpenStreetMap. You can use it as a basemap to plan your own routes.
They’re literally everywhere. You hardly need a map.
