Great idea for a short trip. If you want to come back to the Netherlands, check out the Green Divide bikepacking route through the middle of the country.

The best part of the Netherlands is the eastern half and the south. So if you ever want to come back, get to the other half of the country with pretty rural villages and rural roads.
The Green Divide recommendation is a good one. It is more brutal than you would expect.
Also the Pieterpad Divide is a great cycling experience.
