I have a trek fx 2 as attached and we are looking at doing a few months trip next year to Athens from the UK.
What do you all think are the top 3 updates to this bike that would improve reliability and performance or comfort?

A whole different bike! You are going to suffer on that if you are trying to carry anything
Get a saddle that fits you some shops offer ea butt measurement. Get good grips. Cycling shorts. If you have budget left get pedals too.
Give the drive train a good clean and inspection replace if necessary.
Edit for a long tour I would replace all of the shifting cables and new break pads. Best some cartridge system and some spares too
