Per video, sometimes when I turn my pedals it will engage and work ok. Othertimes it wont and have no resistance *then* suddenly catch and work ok. Sometimes when I'm actually riding, i will be able to cycle for 5 seconds without it engaging at all (feels like I'm riding in the easiest gears).

Hopefully the video demonstrates this ok. It has 3 cog wheel things in the front near the pedals.

It's an older avanti discovery(?) From the 2000s. It was serviced last year but not riden since.

What do you think is causing this? And would it be difficult to fix?

The issue is either the freewheel or the freehub, whichever one your bike has.

    >And would it be difficult to fix?

Well, it depends on whether your bike has a freewheel or a freehub + cassette. If it’s a bad freewheel, the fix is easy: just get a new freewheel and install it (if you want to DIY this, you will need a specialty tool called a freewheel remover to remover the old freewheel). OTOH, if your rear wheel has a freehub + cassette, the repair is going to be more involved, mainly because freehubs are difficult to service, and potentially even more difficult to replace.

I had this problem on my single speed too. It doesn’t sound like free hub is totally engaging, if the bike is old or kept outside it might just be dirty. I got mine working again by flushing it with penetrating lubricants then adding in new lube.
Obligatory also learned-my-lesson, you could just take it to your LBS and they could fix it right up.
