New rig-Surly Bridge Club

Newbie to owning a GOOD bike, but experienced backpacker. Im looking to outfit with a more relaxed stem and bars (more upright) and bags for gear. I'm 6ft, bike is a large frame

1. Bar suggestions? ( Jones H bar, surly sunrise, moloko)

— I'm thinking multiple comfortable hand positions but likely stick with a flat bar

1. Stem suggestions? BBB 35° rise, 70mm-100mm, dimensions threadless 25° rise, 70mm)

2. Rear rack? ( surly, Relentless Components Mule Rack)

3. Saddlle? (Brooks, etc.)

Its a 1x, 11-42 (11-52 option included)
