I'm new to touring and bike packing and am looking to get something used to get started. Is this Mercedes a good place to start or what do you think? It's in the area of €500.
€500 is enough to get a very good touring bike 2nd hand. This is not one of them.

I’d stay away from that bike specifically. Mercedes is not known for great bikes, actually not for bikes at all. The frame and overall setup are not meant for touring.
Take your time, make some studies, and find out what your actual needs/desires are in a bicycle. I don’t see any fulfilled by this bike specifically, but this is just my 5ft.

even if it doesnt seem as comfortable. a hard tail and maybe even a normal rigid fork will do big idfferences for touring.
