Hi, I need to be a bit careful with my lower back, but I love gravel riding and bikepacking, and for the price it’s hard to look past Canyon.
To make things even more complicated, I’m between two sizes.
Do any of you have roughly the same measurements and can share which size you chose — and whether you’re happy with it?

You are not in between sizes IMO, the Grizl is pretty oversized so you would firmly fall into XS.
In doubt take the smaller one. That’s at least what all the lbs guys told me
