    that one on top is only used to set the preload on the headset bearings, at the back of the stem there is the actual clamp bolt (torx), if this is a cp0048 cockpit that one takes 12Nm. If you would over torque the pre-load you would risk pulling out the star nut or expander from the fork, but the system canyon uses in this cockpit/fork has no expander. so likely nothing happened.

  3. That screw is not supposed to be tight. Just to preload the headset. The torque on the handlebar clamp is what keeping the fork and handlebars in place. If nothing cracked or stripped, probably ok but ride easy for a few Kms just to make sure.
