This is my 93 Trek. The current setup is 3×9. I know it’s a Shimano, but I don't remember the model number. When commuting to work, I only ever use the two front gears and cycle through the rear ones. I want to convert it into a 2×9. Does anyone have any good suggestions?

Why do you want to do this? There’s not much savings in weight and you’d have to spend money on parts or tools. If it ain’t broke don’t fix it.
That said, if you’re a tinkerer, then you need a new crank, derailer, and shifter. Alternatively, you can see if you can misadjust the H or L lockout on the front derailer and effectively make it a 2 speed and not do all the other stuff.
