Salsa Carbon beargrease, top tube bag, frame bag, pump and water bottle cage are mounted on front forks. Next will be handlebar bag and saddle storage. What do you guys recommend or like?

Feed bags yo. One on each side of the stem.
For handle bar and saddle you can get some straps and cheap dry bags and rig up a setup with those before splashing out on something more serious and get out there and see if you like bike packing.
Look up pics of DIY saddle pack harness but the most basic is using the roll top clipped around the seat post and voile or similar straps throught the seat rails. For the bars a couple of voile or similar straps is all you need.
