Where am I going wrong here? I seems to be blowing through inner tubers an every 2-3 rides from the valves being sliced by the rims. I’m running ARAYA 26 x 150 rims, with Continental 2.2 race kings.(and yes the tubes are the right size for the tyres too).

is there not a nut that screws down on the valve stem to hold it tight against the rim?
A de-burring tool can help cut down the sharp edges. You might also look into new rim strips already if you haven’t replaced those.
So you’re saying the valve stems are being sliced by the rim?
If so, try a tube with Presta valves that has a nut to hold the valve stem in place.
This is most often caused by low tire pressure. If it’s not that then the rim strip could be compromised or the tire could be too loose. I don’t think it’s a sharp edge or burr in the rim because I can see that the valve is isn’t straight. So the tube and tire is sliding on the rim.
The valve stem being at an angle in your 2nd picture indicates either a problem with installation, a problem with under-inflation, or (much-less likely) a problem with the entire tire slipping on the rim.
If you think it is simply the rim slicing the stem, then Schwalbe tubes with metal stems should solve the problem.
