I believe Continental Gatorskins come on 630, you could also look into Continental Gator Hardshells for even more puncture resistance. The width is probably be fixed for both these options.
Panaracer Pasela Protite at 27×1-1/4″ is a decent tire or Continental Ride Tour 27×1-3/8″
I think schwalbe makes a marathon tire in 27 x 1 1/4. I don’t know if it comes in at spec or undersized though. Anyone else know?
