Bike is a Pinarello Gan T600, officially for 25mm max tires. In the picture I put 28mm tires but I am not sure if it’s way too little and I risk rubbing?
I think like the post we saw a day or two ago, the biggest risk isn’t fiction by the tire itself but debris.

No. There’s plethora of posts with damaged frames with “fitting” bigger tires.

It’s the chain stays and seat stays that are going to limit you, not the seat post.

The distance between your tire and seat post isn’t the issue. The photo is not very useful. Look at the gap between the edges of your tires and the frame in the rear. You need to leave a bit of room on each side.
