I had a Fuji Del Rey from a similar era and it was my favorite bike ever. I rode it for a long time as is, and then converted it to a single speed on the original wheels, swapped over to a set of retrospec deep V’s with a flip flop hub and rode it as a fixed gear for a long time. Its final transformation was going from the drop bars to some bullhorns. I rode that thing a few thousand miles over the course of 10 years. I got hit by two different cars on that bike and it was still my favorite!
