So I was cycling and one of the bolts of the rear triangle came off or something – I’m not sure it’s not there anymore and so the rear triangle is like half coming off.
Should I buy a new bolt or do I need to buy an entire new assembly? Any help or advice would be greatly appreciated…

You need a Brompton hinge kit. Not just a bolt. Requires some specialist tools.
Registered Bromptons have a 7 year frame warranty. How old is your Brompton shown in the photos ?
Considering the missing bolt and misalignment of the rear triangle, the rear triangle and its hinge area plates should be checked for being bent or damaged.

Hmm that’s unusual how olds your Brompton. While this is technically fixable yourself unless you know what your doing babe Brompton deal with it especially if your bikes still in warranty.
