I just ordered a Schwalbe Green Marathon for my ebike and it came looking like this. Never seen this before, I've only ever received tires by mail in their uncontorted form. Is it okay, or am I refusing this package and filing for a refund?

yep, that’s how non-folding tires are shipped to make them smaller. As long as the wires in the beads aren’t crimped at all (shouldn’t be), then it’s totally fine.
