My speedmax just came in and both the front and rear wheels scrape especially the back pretty much fully locking the wheel. Now I’m just wondering is this just a recentering the brakes fix, wheel alignment off, will the knife trick work. What are you suggestions to fix this problem.

Dont know about any knife trick, but go ahead re-center the breaks using whatever method you are comfortable with.
Usually realignment of the caliper solves it for me. Loosen the 2 caliper bolts a little, then tighten while pressing it.
Just readjust the brake calipers.
Loosen, recentre, tighten.
I use these, takes the guess work out of getting an even gap.

Dork disc!!
Go buy the shims off ebay/amazon and set your brake in under a minute.
