There will be many days when the weather is not in your favor, so don’t be afraid to enjoy these good days. I think I wrote before that my mantra was always “This is supposed to be a vacation.”
You’re traveling through an area that I traveled through in 2001. I spent a night in Sete and visited Aigues-Mortes, like you. It doesn’t get much flatter than that region. You’ll probably leave the coast for a few days and then return at Frejus. That’s where you’ll start to be passed by a much finer class of vehicles. I think that the lower corniche through Monaco is the better route, though others may disagree. Just enjoy these days. It doesn’t get much better.
