I am a complete novice and just bought my first every bike – Ross Mt St. Helens Vintage ATB bike. She is cute and sturdy for the NYC potholes, but the saddle is coming apart a bit at the back. I want to try and restore/patch it if any advice on how to do this on a budget?

Depends just how tight your budget is.
You can buy leather repair compounds which are basically just filler for leather to disguise defects but the chances are these will be as expensive if not more expensive than you can get a replacement saddle for.
If your budget is tight and you are OK withit being good enough to do the job a quick patch up with a piece of black gaffer tape will stop it getting worse.
Honestly, just get a Brooks leather one.
To restore this saddle, the time, effort and money would be way more than a new/used Brooks which would look 1000% better and perform as such.
Keep it for the future, but just get a Brooks.
Is that leather or synthetic? I bet it the classic touring spring saddle that is still [available new right now](https://www.google.com/search?q=vintage+style.bicyle+saddle+with+springs&rlz=1CDGOYI_enUS1054US1056&oq=vintage+style.bicyle+saddle+with+springs&gs_lcrp=EgZjaHJvbWUyBggAEEUYOTIJCAEQIRgKGKABMgkIAhAhGAoYoAEyCQgDECEYChigATIJCAQQIRgKGKsCMgcIBRAAGO8FMgcIBhAAGO8FMgcIBxAAGO8FMgcICBAAGO8F0gEJMTEyNjFqMGo5qAIOsAIB4gMEGAEgX_EFF5lWWIc0Cyo&hl=en-US&sourceid=chrome-mobile&ie=UTF-8#piu=ps:12&sv=CAMSkgIa1QESABosMmFoVUtFd2p6ek5hVnJhV1RBeFVUd3NrREhTb05KNUFRZ2kxNkJBZ2ZFQTAicgoTOTAwODA2NDU0OTYzMjkzODE2NRIAGhMyMDY5NDMwNTEyNDM5MjgwMzA4IhMyMDY5NDMwNTEyNDM5MjgwMzA4KgAyADoASgJoZ1IAYgBqAIoBAKABA7ABAMIBAMoBANoBAOIBAPABAPoBAJICANoCADAAQi0yYWhVS0V3anp6TmFWcmFXVEF4VVR3c2tESFNvTko1QVFyWWdHZWdRSUh4QUYgBioyCg5wdmUtU1RSRUFNX1BJVRIecHZlX3MzUzRhYk9uRlpPRXA4NFBxcHFjZ1FrXzEzGAEwATgBIJvlu_oMMAFKCBACGAEgASgB)
If it is padded underneath, it’s synthetic. (Pleather) you can buy new ones for less than $30
