im new to the bike game and want to buy the canyon endurace cf 7 ltd or the axs – so i got two questions.
Which one would you prefer for a beginner?
Which size is the best? Im near to the border of the XL Size – i want to add some aerobars at my cockpit

If you doubt on the size, pick the smaller size. The bike is more easy to make larger. A bike frame that is too large will never fit
I personally am very fond of SRAM’s 1by gravel drivetrains and their 2by ones should be equally good. So in this case, the Endurace CF7 AXS in size L.
Your height is on the high end for L but since your legs are more in the middle of the rectangle, I feel like going for that would be safer.
