The Endurace CF7 was mine and my wife's first road bike and they served us well including completing our first 70.3. We're currently training for Lake Placid 140.6 and looking for any advantage we can get on the bike with how difficult the course is.
I'm not comfortable with the clip-on solutions for the CP0030 cockpit and am looking to find a stem / handlebar combo that is reasonably affordable while still being similar quality to the OEM cockpit and allows for clip-on aero bars.
I believe we can start with the Canyon ST0035 1 1/4" Stem (link below), but I'm struggling to find a drop handlebar that is available in 37-38cm and 40-41cm, in-stock, and clip-on compatible.
My wife has the XS CF7 which means a 80mm stem and 37cm width cockpit with 74mm of reach. I have a M CF7 which means a 100mm stem and 41cm width cockpit with 74mm of reach. I'm looking at decreasing my reach a tiny bit with the 90mm stem unless the reach on the handlebars is 70mm instead of 75-80mm.

I know you’ve written you are not comfortable with the clip ob solutions but have you seen the Deda TT 314 Clip-On? It uses a wider clamping area which distributes the weight more evenly and comes from a reputable brand.
Might be worth checking Giant. They use the same steerer tube diameter in their OD2 bikes so you may find some stem options there if you were interested in looking around.
I’d also seriously be tempted to check AliExpress for something like this, even if it’s just for alloy bars for example. Some really great stuff is coming from China and I love my Elitewheels. I recently bought some cheap alloy bars from UNO in 38cm and can’t wait to put them on my commuter.
