Use case:

Gravel bike 31.8mm drop bar, with ~60 minute commute to work one-way. Can charge devices at work/in bicycle locker. In summer will be perfect bright visibility – however in winter commute will be low(er) light (but not pitch black etc). I have a Garmin Edge Explorer 2 (if this makes difference)

Id like one camera (instead of having to buy a front and rear), and for the camera to take the whole 180deg of frontal arc, and partially on sides – for close car passes. Requires image stabilisation – to get car licence plates. Also requires ability for use in lower light/winter commuting and USB-C. Nice to have: able to charge the camera (with a small battery pack and SUB-C cable) when still in mount – so I dont have to constantly remove and remount camera.

Other requirement: Not to use a mount which is far in front of the bars (example is in picture 2). Very strong preference for a solution like picture 1 (k edge go big mount) – with understanding that the side angles will be compromised compared to a mount which is ~300mm+ in front of the bars. Light is not required – already have light. And I dont need a little screen on the camera – but am happy to use screensaver mode if camera has a screen.
Brains trust – are the fields of regard arcs reasonable I have drawn?

I have been looking at DJI, GoPro MAX2 and Insta360 x5 – but am unsure as I wont be using the mount 300mm+ in front of bars etc.

What camera solutions would you suggest?
