Are they sealed or cup and cone bearings. If cup and cone, they have been overtightened and are binding.
Can take a few goes to get cup and cone bearings running optimally. Too loose and you have play , you want them just tight enough that there is 0 play and minimal friction.

Cup and cone adjustment is too tight

Sounds like it stops when you pedal, so probably the bearings in the body. Did you grease those? How long since you last greased them? How many km have you driven on it? Could just be worn down.

The Freehub has also bearings. The get louder over time . Not a major issue if it doesnt have major play and messes up shifting.
