I live in a tiny studio apartment and have to store my bike upright using the rack pictured. I'd like to get my velo orange fenders on my bike, but the rear would have to be fast to remove after every ride. Is that possible?

I guess you can’t hang anything from the wall? A better option would be a hook-style rack that doesn’t balance where the mudguard covers the back wheel. Maybe there are some free standing options that use a hook.
I’m not aware of anything that would make VO mudguards quick release, especially since with full fenders the back one connects at four points. The two points at the bridge of the chain and seat stays would be a challenge.
They’re not as pretty but SKS have some quick release options depending on tyre width? There are some nicer looking ones on the market too.
There are storage racks that work with fenders (steadyrack etc.) And there are quick release fenders, you will need to pick one or the other.
