Fire roasted quail! I love quail and pretty much all game birds. These things are so delicious I can probably eat 10 of them! You can marinate them for hours if you want but trust me they taste delicious even if you do it for 5 min.

8 quail (flattened)
3 Tb pepper paste
6 cloves garlic smashed
2 tsp salt
1 tsp sumac
1/2 tsp cumin
1 oz olive oil
.
Combine all the ingredients together and marinate. Skewer through the breast and legs so they stay flat. Cook over hot coals rotating often for 5-10 min. You donโ€™t want to over cook these birds.

I cringe when kitchen staff uses a clothe towel to adjust a plate presentation (multiple times at that !), that's what day old bread is for. Brilliant chef. I'll stop by again. Thumbs up.
