Hello. I am a newbie in terms of bike stuff. I have bought a rim brake bike with an Alex Rim ALX320 on it (I googled the wheel and it turns out, it only has a 10 speed hub/Never checked it, though.) I bought an R7000 groupset and now I am on a dilemma. Is there any other way to fit an 11 speed cog besides getting an 11-34 HG-800? Is removing one cog also viable? I just want someone's take on it. Thank you!

A Shimano MTB cassette will fit. It’s that or an aftermarket one.
If it’s hyperglide you can use any number of 10 speed cassettes with that system granted you have compatible parts. I’ve run 11 speed SRAM/ Shimano Components on various hubs exactly like yours without any issues. Currently running 12 speed on an 8-10.
