Absolute crap
While I love hydraulic disc brakes, their one downfall is that they are much better than rim brakes, until they aren't. They often give no indication they are going to fail. They just suddenly stop working. You can look at a rim brake in 2 seconds and know whether it's good for another year or not.
I like this braking system, one of the best, easy, cheap, adjustable and let enough space for mud
Fa real- V brakes never worked properly.
My big Ks bike has centre pull and it was one of the last bikes to not have disc brakes-

My cantilevers needed replacing and the bike shop suggested v-brakes (cantis we’re out of stock), but I prefer the look of cantilevers. They stop as well as they need to.
I love it dialed in cleaned up right down to the pretty rim tape

The most hated brake is a cheap hydraulic disc system that won't bleed easily. These are the gold standard.
Work better than cheap disk brakes
Cantilevers were pretty sh*tty brakes in comparison to Shimano's V-Brakes. Back then, Maguras were top notch, but V-Brakes did the job almost as good.
How you gonna put on the wheels now?
Tips on going downhill on pavement on a very steep road with V brakes? Haven’t been on a mtb in 7 years cause I almost cracked my skull open downhilling on a different bike
There cool till you have to fix it
Once you know how to set them up properly they're not that bad.
